Set the turkey on a wire rack over a baking sheet and refrigerate uncovered for 24–48 hours. The skin will dry out visibly — that's what you want.

Take the turkey out of the fridge 1 hour before roasting. The skin will look dry and papery. Good. That's what produces crispy skin.

Mix the softened butter with sage, thyme, garlic, lemon zest, salt, and pepper. Gently work your fingers under the skin over the breast and thighs to loosen it. Spread the butter directly on the meat under the skin. Rub any remaining butter over the outside.
