- 2ribeye or strip steaks(1.5 inches thick, at room temperature)
- Salt and freshly ground black pepper
- 1 tbspolive oil
- 2 tbspbutter
- 2garlic cloves(smashed with the flat of a knife)
- 3fresh thyme sprigs
For the mashed potatoes
- 2 lbsYukon Gold potatoes(peeled and cut into even chunks)
- 4 tbspbutter(softened)
- 1/2 cupheavy cream(warm — cold cream makes cold potatoes)
- Kosher salt — season until it tastes good, not until a recipe says stop

Start the potatoes
Put the potato chunks in a pot and cover with cold water by about an inch. Salt the water generously — this is your only chance to season the potatoes from the inside. Bring to a boil and cook until completely tender, about 15 minutes. A knife should slide through with zero resistance.

Season the steak
Pat the steaks dry with paper towels — moisture is the enemy of a good sear. Season both sides and the edges with salt and pepper. Use more salt than you think is reasonable. Let them sit at room temperature while the potatoes cook.

Sear the steak
Heat a cast iron or heavy stainless steel pan over high heat until it just starts to smoke. Add the olive oil — it should shimmer immediately. Lay the steaks in the pan away from you (oil splatters). Leave them alone for 3-4 minutes. Flip, add butter, garlic, and thyme. Tilt the pan and spoon the melted butter over the steak for about a minute.

Rest the steak
Transfer the steaks to a cutting board or warm plate. Let them rest for at least 5 minutes — 7 is better. This step is not optional. Resting lets the juices redistribute so every bite is tender instead of ending in a puddle on the plate.

Finish the potatoes
Drain the potatoes well. Return them to the pot over low heat for 30 seconds to steam off excess moisture — this makes them fluffier. Rice them or mash by hand. Add the softened butter and warm cream. Stir until smooth. Taste and add salt — mashed potatoes need more salt than you expect.
Notes
- Yukon Gold potatoes make the creamiest mashed potatoes because of their natural butteriness. Russets work too but need more butter and cream.
- Warm the cream before adding — either in a small saucepan or 30 seconds in the microwave. Cold cream drops the temperature of the potatoes and you'll never fully recover it.
- Use an instant-read thermometer for the steak: 125°F for rare, 130°F for medium-rare, 135°F for medium, 145°F for medium-well. Pull it about 5°F early — carryover cooking does the rest.
- Rest the steak on a warm plate, not a cold cutting board. A cold surface pulls heat out of the meat too quickly.
- If you don't have a cast iron pan, a heavy stainless steel or carbon steel pan works fine. The key is high heat and letting the steak develop a crust before flipping.
