  • Salt and pepper to taste

    Preheat and prep

    Preheat oven to 425°F (220°C). Pat chicken thighs dry with paper towels — dry skin is what gets crispy.

    Season the chicken

    Place thighs on a sheet pan. Drizzle with olive oil and season with garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly, then arrange skin-side up. Don't crowd the pan — leave space between each thigh so they roast, not steam.

    Roast

    Roast for 35–40 minutes until the skin is golden brown and crispy. The internal temperature should reach 165°F (74°C) — this is the USDA safe minimum for poultry.

    Cool and store

    Let cool on the pan for 10 minutes. You can pull the meat from the bones (discard bones and skin) for easy shredding, or leave thighs whole for slices. Store in a shallow container with any accumulated pan juices — those juices are flavor you don't want to throw away.

    Shred or slice as needed for tacos, grain bowls, quesadillas, soup, or pasta. The meat keeps for 4 days in the refrigerator or 3 months in the freezer.

Notes

  • Bone-in, skin-on thighs cost about the same as boneless and stay noticeably moister through reheating.
  • Double the recipe. Freeze half for a future week — thaw overnight in the fridge and it's as good as fresh.
  • Save the bones. Simmer them with water, onion, and carrot for 45 minutes and you've got free chicken stock.
  • For extra flavor, marinate the thighs overnight in olive oil, lemon juice, garlic, and herbs.
  • No sheet pan? A cast iron skillet or rimmed baking sheet works just as well.
