    Pour the heavy cream into a small saucepan. Heat over medium until steam rises from the surface and tiny bubbles form around the edge — about 3 minutes. Do not let it boil or the cream will separate. If you use a thermometer, aim for 180°F.

    Pull the pan off the heat immediately. Add the chopped chocolate all at once. Let it sit undisturbed for 1 minute — the residual heat from the cream will start melting the chocolate from the bottom up. This rest is what prevents a grainy texture.

Notes

  • Make the fondue up to 2 days ahead and refrigerate in a sealed container. Reheat gently over low heat or in the slow cooker, whisking occasionally. Add a splash of warm cream if it thickens.
  • Add 1 tablespoon of orange liqueur, raspberry liqueur, or coffee liqueur for the adult version. Stir in with the vanilla after the chocolate is melted.
  • If the fondue seizes (turns grainy or stiff), whisk in warm cream 1 tablespoon at a time until it smooths out. This almost always rescues it.
  • Leftover fondue keeps in the fridge for up to a week. Reheat and use as a hot chocolate base — stir a spoonful into warm milk — or as a drizzle over ice cream.
  • For a dairy-free version, substitute full-fat coconut cream for the heavy cream. The fondue will have a slight coconut flavor that pairs well with dark chocolate.
